I have no real experience with the modern high-end PCs and whatnot so I can only speak for my own case. I've been doing all my stunting since ~2010 on a laptop and have no real qualms with it. If you dislike the flat keys on a laptop then you can also buy a simple USB keyboard, and dito for the mouse. In terms of performance, I have been using a cheap HP laptop (~250 euro) ith about 2.2 GHz dual core and a built-in graphics card for the last three years, which works fine but is close to becoming outdated/slow. Prior to this, I had a 300-400 euro Acer, which was also fine but I fucked it up because I'm an idiot. No idea on the specs for that one, but it was slightly worse than what I currently use.
So in short, any laptop should do, I think a little bit more recent than 2008 would be wise. If you don't want to spend so much I suggest looking in the 300 euro/dollar price range, that should already do the trick.
