Tick "Force lossless RGB capture" from FRAPS's Movies tab and max out all the image quality settings from nVIDIA/ATi Control Panel (I guess you know how to do this?). Also make sure that SA's own image quality settings are maxed out. That's all I can come up with.
I've never played SA with 1920-resolution but according to this (http://www.widescreengaming.net/wiki/Grand_Theft_Auto:_San_Andreas#Supported_Resolutions) you need to patch the game. Give it a shot.

You can play SA on FullHD without patching it (wasn't there a problem with v1.0 replays on v1.01/2.0 anyway?).

ASI loader is required for it, don't forget to back up the .dll files.
Works fine for me on v1.0.

because you have 1.01 version.

GTASA 1.01 was only release to remove the hot coffee mod, and let you choose HDTV resolutions. And for sure some minor corrections.
