Actually you don't even need to turn the opposite way, it'll turn itself straight from the inertia.

If you know how to lean forwards and backwards at the right time, you won't turn off the rail. You're just turning into it way too much.

Well, this is pretty much the basis of the whole grinding genre. Once you get this down you can start fiddling with different, harder methods of the grind. Doesn't make much sense if you're gonna go into a Corkscrew to grind from a roof while you can't even do the simplest forms of the grind.
