By the way, might wanna set up the packer just how I did mine, put the front wheels on the stairs, helps alot.

I tried to get to that roof so much using the PS2 version without a packer that it left evil memories in the back of my brain...

i landed on the roof and rolled off the side...
to get over that damn hump in the road, wheelie over it, you wont be affected if you wheelie over it
was a good challenge, took me a while

As Vendetta said, wheelie over the little grassbump in the middle of the road and you'll be fine.
